Peppered Salami Bites
Filling
4 Ounces Goat Cheese
12 Ounces Regular Cream Cheese
3 Tablespoons Orange Juice Concentrate
1 Teaspoon Ground Fennel or Fennel Pollen

Mix together and allow flavors to develop for an hour or more. Using pre-sliced black pepper crusted salami, fill each slice with ½ teaspoon of the filling and fold over like a small taco. Fill a platter with these salami “tacos” then finish the platter with additional fresh ground pepper and grated orange rind. Drizzle with a little Bassetti EVOO.

Rosemary Focaccia with Stilton, Grapes and Honey
Use your favorite focaccia recipe or purchase a prepared focaccia. Brush top with Bassetti EVOO and sprinkle with fresh minced rosemary. Slice the focaccia into square or diamond shaped bite sized pieces. Keep pieces in the original focaccia shape and crisp lightly in a hot oven. While warm from the oven, top with crumbled Stilton and drizzle with honey. Finish with halved seedless green and red grapes.

Blue Cheese with Port and Walnuts
Add 1/2 cup Ruby Port to 2 Cups well veined and crumbled blue cheese. Mix and allow to stand in refrigerator overnight for the cheese soften and absorb the port. Next day, stir to combine the mixture – it should thicken with some crumbled pieces remaining – add a little more port if too stiff. Add ½ cup of chopped walnuts. Serve with sliced pears and cinnamon graham crackers.

 

Mains

 

Chinese Lemon Chicken (Bassetti Meyer Lemon Jelly)
Bread boneless, skinless chicken breasts (or chicken tenders) with egg and panko. Pan fry with Bassetti EVOO and a little sesame oil, season with salt and pepper. Remove from pan and slice across the chicken piece and fan on serving plate for presentation. Heat one jar of the Bassetti Meyer Lemon Jelly in the microwave until hot. Spoon across sliced chicken breasts and top with finely sliced green onion and coarsely chopped cilantro. Chopped peanuts optional.


Beef or Pork Roast (Bassetti Garlic Glaze)

Prepare your favorite beef or pork roast – top the roast with a jar of Bassetti Garlic Glaze for the last 20 minutes of cooking.

Pizzas (Bassetti Olive Jam)
Instead of using a tomato based sauce, try using a couple of tablespoons of the Bassetti Olive Jam on your favorite dough or prepared crust. A favorite combination is the Olive Jam base with grated Gruyere cheese, prosciutto and roasted garlic.

 

Sweets

 

Ultimate Brownies (Bassetti Blood Orange Glaze)
Prepare your favorite box or scratch recipe brownies but substitute Bassetti EVOO for the neutral oil. Prepare a topping of 6 ounces whipped cream cheese, one egg and 4 tablespoons of Blood Orange Glaze. Mix well and drizzle over brownie batter. Lightly cut in the topping to the batter. Bake according to instruction. Cool and lightly frost with Nutella.

Grilled Fruit (Satsuma Plum Glaze)
Grill your favorite stone fruit and pineapple. Mix one 8 ounce container of mascarpone with 1/3 cup of Bassetti Satsuma Plum Glaze and ½ teaspoon of Almond flavoring. Top the warm fruit with a spoonful of the flavored mascarpone.
